AM:PM Burritos was born during training. While preparing for deployment with the US Navy, founder Ervin Williams — a veteran who served across Iraq and Africa — discovered a breakfast burrito truck that stopped him in his tracks. Bold flavors, real ingredients, the kind of meal that made a hard day feel human again.
His first instinct was to invest and franchise the concept. But back home in Raleigh, he saw the gap nobody was filling — late night. Breakfast burritos exist. Quality late-night food? Almost nowhere. So he built something entirely his own.
He stripped out the rice, sourced directly from local farms, added a late-night window nobody else was covering, and created The Rice-Less Rito™ — lighter, bolder, and available when Raleigh actually needs it most.
AM:PM launched as a pop-up in 2022 and has been building a loyal Raleigh following ever since. A permanent downtown location is coming. The mission stays the same: give Raleigh the quality food it deserves, at the hours it actually needs it.
